Mini Honey Cake Muffins

Makes 12 muffins.

  • ¾ cup oil
  • ¾ cup sugar
  • 4 eggs
  • ½ cup honey
  • ½ cup silan (date syrup)
  • ½ cup walnuts, broken into pieces
  • 1 tsp. ground cloves
  • 3 cups self-raising flour, sifted
  • 1 level tsp. baking soda
  • 1 tsp. Turkish coffee
  • 1 cup boiling water

Toppings:

  • ½ cup walnuts, chopped

Preheat oven to 170°. Mix the oil, sugar, eggs, honey, and silan together in a large bowl. Add the walnuts, cloves, flour, and baking soda, and mix well.

Dissolve the coffee in the boiling water, then add it to the mixture and stir. (If you add the coffee grounds as well as the liquid, the color of the cake will be much darker, but the taste will remain the same.)

Pour the batter into a pitcher. Line a muffin tray with paper liners, then spray them lightly with oil spray. Pour the batter into the muffin liners until they are ½ to ¾ full. Add the walnut pieces on top of the batter.

Bake the muffins for 40-50 minutes or until a toothpick inserted in the center of the muffins comes out dry and clean. Remove the tray from the oven and let the muffins cool down.

  • Level of difficulty: Easy
  • Time: 1 hour
  • Status: Parve

ENJOY!

Words & Brush Recipe Corner: Pan Bagnat (Pressed French Tuna Sandwich)

Pan Bagnat (Pressed French Tuna Sandwich)

I'm gonna show you how to make the world's most famous tuna sandwich, which is really the world's most famous tuna salad, the Niรงoise, stuffed and pressed inside a whole loaf of bread. According to people who consider things, this is considered the ultimate picnic sandwich, since it has to be made ahead, and the longer it sits in its own juices, the better.

Words & Brush Recipe Corner: Zesty Chicken With Basil & Almonds

Zesty Chicken With Basil & Almonds

By Lisa Star, Meatland

https://www.meatland.net/

See Cook's Notes before proceeding.3 frozen chicken fillets*3 tablespoons olive oil1/2 teaspoon chili flakesZest of one, large lemonMaldon salt and coarse black pepper1 teaspoon crushed garlic1/4 cup basil leaves1/4 cup almonds with skin on, roughly chopped2 tablespoons lemon juice (optional)2 tablespoons soya sauce (optional)Lightly cooked green beans or broccoli florets (optional)* Can use more but then increase remaining ingredients accordingly. 1: Slice chicken breasts on the slant using a sharp knife which is easiest to do while slightly frozen.2: Heat oil in a large frying pan or wok and add chicken, chili, lemon zest, salt, pepper, and garlic.3: Toss the chicken for 2 to 3 minutes then add the basil and almonds and toss for another couple of minutes till chicken is just cooked and nuts and herbs are fragrant.4: Add lemon juice, soya sauce and just cooked green beans or broccoli if you choose, toss through, and serve over  white or brown rice. COOK'S NOTES: I add the soya sauce and lemon juice for extra flavor and moisture but the original - without these additions - is absolutely delicious too. Feel free to increase the nuts, basil or lemon zest as it only makes an already wonderful dish even better. Lemon slices are for illustration purposes only.

ENJOY!
