Zesty Chicken With Basil & Almonds

3 frozen chicken fillets*
3 tablespoons olive oil
1/2 teaspoon chili flakes
Zest of one, large lemon
Maldon salt and coarse black pepper
1 teaspoon crushed garlic
1/4 cup basil leaves
1/4 cup almonds with skin on, roughly chopped
2 tablespoons lemon juice (optional)
2 tablespoons soya sauce (optional)
Lightly cooked green beans or broccoli florets (optional)
* Can use more but then increase remaining ingredients accordingly.
1: Slice chicken breasts on the slant using a sharp knife which is easiest to do while slightly frozen.
2: Heat oil in a large frying pan or wok and add chicken, chili, lemon zest, salt, pepper, and garlic.
3: Toss the chicken for 2 to 3 minutes then add the basil and almonds and toss for another couple of minutes till chicken is just cooked and nuts and herbs are fragrant.
4: Add lemon juice, soya sauce and just cooked green beans or broccoli if you choose, toss through, and serve over white or brown rice.
COOK'S NOTES: I add the soya sauce and lemon juice for extra flavor and moisture but the original - without these additions - is absolutely delicious too. Feel free to increase the nuts, basil or lemon zest as it only makes an already wonderful dish even better. Lemon slices are for illustration purposes only.
