To keep things simple, I love taking a single vegetable and making it the star of the salad. I remember one morning searching through the fridge, and I noticed we had so many cherry tomatoes. I realized that if some of them weren’t used soon, they might never make it to the table.

I cut them into quarters, added some fresh herbs and a few simple seasonings, and suddenly there was a salad. At that occasion, I was serving it with a meat meal, but another time my daughter discovered that adding baby mozzarella balls gave the salad a little more oomph, along with some well-loved protein.
Yield: 4-6 Servings

Ingredients:

3 cups cherry tomatoes, quartered
1 cup baby mozzarella balls, drained
1/2 small red onion, thinly sliced
1/2 cup fresh basil leaves, torn
2 Tbsp. olive oil

Salt and pepper to taste

Directions:

Place the cherry tomatoes, mozzarella balls, red onion, and basil in a large bowl. Drizzle with the olive oil, season with salt and pepper, and toss gently. Serve immediately, or refrigerate until ready to serve.
