Honey BBQ Chicken Wings

These Honey BBQ Chicken Wings are juicy, tender and flavourful. They’re covered in a blend of spices, baked to a crisp and then tossed in the best Honey BBQ Sauce!

yield: 30 CHICKEN WINGS,  
prep time: 5 MINUTES, 
 
cook time: 1 HOUR 4 MINUTES, 
total time: 1 HOUR 9 MINUTES

INGREDIENTS

TO WASH WINGS:

  • 3 and ½ - 4 lbs. chicken wings, tips removed, drums and flats separated
  • Cold Water
  • Vinegar
  • 1 lemon

SEASONING BLEND:

  • 1 and ½ teaspoon salt
  • 1 and ½ teaspoon freshly ground black pepper
  • 1 and ½ teaspoon hot chilli powder
  • 1 and ½ teaspoon smoked paprika
  • 1 and ½ teaspoon garlic powder

HONEY BBQ SAUCE:

  • ¼ cup unsalted butter
  • 1 cup BBQ sauce (I recommend Sweet Baby Ray’s)
  • ½ cup honey
  • 2 tablespoon ketchup

  • INSTRUCTIONS

WASHING AND DRYING THE WINGS:

  1. Place a wire rack on top of a parchment lined baking sheet. The rack and sheet should be close to the same size. Set aside. 
  2. Wash the chicken wings with equal parts of cold water and vinegar. Cut lemon in half and squeeze one half of the juice into the water/vinegar. Allow wings to soak for about 20-30 minutes, then drain the water (Note 1).
  3. Line the wet wings on the wire rack and place in the refrigerator uncovered to dry for about 1 hour or overnight. Flip the wings halfway through so both sides can dry evenly. If you don’t have much time, you can go ahead and pat the wings dry with a clean paper towel. (Note 2)

FOR THE CHICKEN WINGS:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silpat mat. If you have an oven proof rack that fits on top of your baking sheet, you can place that on top. 
  2. In a small bowl, combine the salt, black pepper, hot chilli powder, smoked paprika and garlic powder. 
  3. Place all the chicken in a medium bowl, then sprinkle on ⅓ of the seasoning blend. 
  4. Use a wooden spoon to toss the wings and coat the wings. Continue to sprinkle on more and more of the seasoning blend while tossing the wings until all the seasoning has been added (Note 3)
  5. Line all the wings onto the lined baking sheet, don’t worry about them touching. Bake in preheated oven for 20 minutes. After 20 minutes, remove the wings and flip them to the other side. Return to oven and bake for another 25 minutes. While wings are baking, prepare the Honey BBQ Sauce. 

FOR THE HONEY BBQ SAUCE:

  1. Add the unsalted butter to a medium saucepan over medium heat. Heat until melted. 
  2. Once butter has melted, add the BBQ sauce, honey and ketchup. Stir to combine, then allow to come to a simmer. 
  3. As soon as the sauce begins to simmer, decrease the heat to low and allow the sauce to simmer, stirring occasionally, for about 10-15 minutes. 
  4. When the wings have finished baking, place them all into a large clean bowl. Pour the Honey BBQ Sauce over chicken, then use a clean wooden spoon to toss the wings until they’re completely coated in the sauce. 
  5. If you used parchment paper, it may be pretty dirty by now so feel free to replace it with a fresh sheet of parchment. 
  6. Place coated wings back onto lined baking sheet then return to the oven and bake for another 7-8 minutes, until sauce is bubbling and has caramelized. 
  7. Remove from oven and allow wings to cool on baking sheet for about 5 minutes, then transfer to a serving platter. Enjoy!

  1. I prefer drying my wings on a rack in the refrigerator rather than patting them dry with a paper towel, because not only can the paper towel leave behind bits of paper on the chicken, but leaving the wings uncovered in the refrigerator is supposed to help create a crispy skin on the chicken once they’re baked. 
  2. The reason you wanna add the seasoning blend in portions is so that every inch of the wings are covered. So add some of the mix, toss, then add more seasoning blend where you see uncovered spots. 
  3. If there’s any sauce remaining, store in a freezer safe ziplock bag and store in the freezer. I’ve noticed that this sauce does not freeze solid at all, so you won’t have to thaw it out. Just pour back into a saucepan and reheat before using again.

March Open Thread

Ah, at last good bye February and March it is.    Come join us for awhile, we're a good group.  Some of us dabble in writing or art or both.  Some of us just drink coffee or tea and stay awhile.   








There's nothing like that first sip in the morning  before
starting on the project.  Creativity is everywhere, all around us.











Dare to dream,  make it happen. Let the creativity 
flow through you onto the screen, the canvas, maybe you are
the crafty type.   









Don't forget those breaks in between to come back afresh
to get back to your project, stronger, thinking critically how to solve

Words & Brush Recipe Corner: HOW TO MAKE THE BEST ONE POT CHICKEN RICE

Ingredients: Chicken Marinate ½ kg boneless chicken ½ tsp salt 2 tbsp plain yogurt 1 tsp ginger paste 1 tsp garlic paste ¼ tsp turmeric ½ tsp red chili One Pot Preparation 3 tbsp cooking oil ½ cup sliced onion 2 bay leaves ¼ tsp ginger paste 1 ½ cup-soaked basmati rice 1 tsp salt 1 ½ cup hot coconut milk 1 cup hot water ½ tsp garam masala 1 ½ tbsp fresh coriander 1 tsp ghee Instructions: 1. Mix the chicken pieces with salt, yogurt, ginger paste, garlic paste, turmeric, and red chili 2. Saran wrap and marinate for 15 minutes 3. Place the chicken in a pot with cooking oil and cook until brown for 10-12 minutes on low-medium heat 4. Remove the chicken pieces, add sliced onions, splash of water, bay leaves, ginger paste and rice that has been soaked for 30 minutes 5. Pour hot coconut milk and hot water 6. Place the chicken back into the pot 7. Cook for 10-15 minutes on low-medium heat with the lid on 8. Sprinkle garam masala, chopped coriander leaves, and ghee 9. Give it one last stir before serving 10. Ready to Enjoy!

 30 Minute Chicken Stir Fry Recipe

Ingredients for Chicken Stir Fry: Prep Time - 15 mins Cooking Time - 15 mins (Tsp-Teaspoon; Tbsp-Tablespoon) - Boneless Chicken - 1 lb or 450 gms (cut into bite sized pieces) Seasoning for the Chicken: - Salt- 1/2 tsp - White Pepper Powder- 1/2 tsp - Dark Soy Sauce- 1/2 tsp Vegetables: - Broccoli florets- 2 US cup measure (100 gms) - Carrots, sliced- 1 US cup measure (90 gms) - Red Bell Pepper- 1 US cup measure (90 gms) - Yellow Bell Pepper- 1 US cup measure (90 gms) - Garlic, chopped- 2 tsp (around 4 cloves) - Ginger, chopped- 1.5 tsp Stir Fry Sauces: - Chicken Stock- 1/4 cup (can use readymade low sodium chicken broth/stock too) - Dark Soy Sauce- 2.5 tsp - Red Chilli Sauce- 3 tsp - Honey- 1 tbsp - Corn slurry- 2 tsp corn flour/starch (Mixed in 1 tbsp water) - Sesame Oil- 2 tsp Other Ingredients: - Oil- 2-3 tbsp - Salt- to season - Pepper Powder- 1/4 tsp Preparation: Cut the boneless chicken into bite sized pieces. Take out the broccoli florets, cut the carrots into slices and the red & yellow peppers into cubes. Also peel and chop the garlic and ginger. Process: - Heat oil in a wok and add the chicken pieces. Give a stir for 30 secs and then add salt & white pepper powder to season the chicken. - Now stir fry on high heat for around 2-3 mins and then add 1/2 tsp Dark Soy Sauce. Give a mix and continue to stir fry on high heat for another 2-3 mins till the water has completely dried up and the chicken is fried and browned. - Remove and set aside on a plate. - In the same oil, add the chopped garlic & ginger. Give a stir for 15 secs and then add the sliced carrots and cubed red & yellow peppers. Mix and stir fry on high heat for 1 minute before adding the broccoli florets. Also add salt to season (a pinch) and 1/4 tsp pepper powder. Give a mix and continue to stir fry on high heat for 2 mins. - Now add the sautéed chicken pieces and give a mix on high heat for 1 minute. - Add the Dark Soy Sauce, Chicken broth, Red Chilli Sauce and honey. Give a mix and stir fry on high heat for around 2 mins till the sauce has nearly dried up. - Now add the corn slurry and the sesame oil, give a mix and continue to stir fry on high heat for 1 min till all the sauce has dried up and coats the chicken and vegetables.
