Seem like everywhere I dip a spoon these days, I’m scooping up turkey chili. It’s everywhere. And I’m not complaining about that. It’s also tasty.  BUT…the other day I wondered “Why not chicken chili?” The noble chicken deservers it’s spot on the chili mantle. And Chicken Chili has such wonder alliteration. As soon as I said it to my kids, they went running around the house screaming “chicken chili”. So, I made some. It was very yummy. And so I share with you.


Prep Time  60 minutes, Cook Time  300 minutes, Total Time  360 minutes


Recipe Overview and Keys to Success

To make the best chicken chili, just make sure to do the following

  1. You’ve got to get a rich layering of flavors to make a good chili. That doesn’t take too much work, but it does take a fair number of ingredients and a lot of time. I like to set aside 6 – 8 hours to allow it to simmer.
  2. With all the ingredients, don’t forget the humble salt and pepper. Both are needed to make everything else shine.
  3. Toast the spices and the tomato paste a bit before adding the tomato sauce
  4. Be creative.  It’s hard to go wrong with chili.  If you have an idea…go for it! I’ll often add things like maple syrup, coffee, beer…to change up the flavors a bit. Below is a “base” recipe.

Ingredients for Chicken Chili

 

  • 2 lbs ground chicken
  • 1 small can tomato paste
  • 2 16 ounce cans of crushed tomato
  • 1 16 ounce cans white beans
  • 1 16 ounce can black beans
  • 1 16 ounce can of pinto beans
  • 2 - 3 tablespoons cumin
  • 2 - 3 tablespoons chili powder
  • 2 teaspoons oregano
  • 1 12 ounce beer
  • 2 large diced onion
  • 2 diced red bell pepper
  • 2 cups-ish diced celery
  • 3 – 5 grated carrots
  • 1 – 2 green chili peppers like poblano 
  • 1 quart chicken stock
  • 8 finely chopped garlic cloves
  • Olive oil
  • Salt and pepper

Directions for Chicken Chili

 

  • Heat a large pot over med-high heat and coat the bottom in olive oil
  • Add the ground chicken, and season with salt and pepper
  • Toss the chicken, stirring until fully cooked through
  • Chicken will tend to clump up into large pieces. Really try to break up the meat using a wooden spoon.
  • Remove the cooked chicken from the pot, and hold in a bowl
  • There is probably not a lot of fat in the pot, if there is, drain all but a few tablespoons that you’ll need for cooking the vegetables.  If needed, add oil to coat the bottom of the pan.
  • Add the onion, peppers, celery, carrot, and garlic, and season with salt and pepper
  • Cook over medium heat for about 15 – 20 minutes, string occasionally, until the onion is translucent
  • Add the spices, and toast for about 1 minute; stirring to ensure they don’t burn
  • Add the tomato paste, and cook for 3 - 4 minutes, until the tomato paste turns a rusty color
  • Add the chicken meat back to the pot, along with the crushed tomatoes
  • Add enough chicken stock & beer to make the chili fairly loose, and stir-able, like a thin stew
  • Bring the chili to a simmer, cover and cook for 3 - 4 hours (at least).
  • Open the cans of beans and rinse off the packing liquid, leaving the cleaned beans
  • Add the beans to the chili, and continue to cook for at least another hour – 2 is better
  • Taste the chili, and adjust the salt and pepper as needed
  • If the chili is too thick, add some additional chicken stock to thin it; or alternatively, if too thin, continue to simmer until the chili reaches the desired thickness.
  • Serve and enjoy!

Fried apple fritters, known as frittelle in Italian. To make the fritters, you dip slices of apple in tempura batter, then place them in oil to fry them. They are best eaten while they’re still hot.

FRIED APPLE FRITTERS

Makes 15 pieces. 


Ingredients
  • 2-3 apples (can also use pears, bananas or other fruit)
  • Juice from 1 lemon
  • 140 gr. (1 cup) white flour, sifted
  • 2 large eggs
  • Pinch of salt
  • 80 gr. (1/3 cup) sugar
  • 200 gr. (1 cup) milk or water
  • 5 gr. (½ packet) baking powder

Topping:

  • ½ cup sugar mixed with 1 teaspoon cinnamon

For deep-frying:

  • Oil

Directions:

Peel the apples and cut out the cores. 

Slice apples into 1-cm.-thick rings. 

Transfer the apple rings to a bowl, then pour lemon juice on top of them and let sit for 1 hour.

In a separate bowl, mix the rest of the ingredients together. 

Let the bowl rest for 30 minutes. 

Drain the apple rings, then dip them in the egg mixture. 

Pour oil into a pan for deep-frying and heat.

Fry the apple slices in the hot oil until they turn golden brown.

Remove the apple pieces and place them on paper towels. 

Dip the apple pieces in the cinnamon mixture, or sprinkle the cinnamon mixture on top of them, and serve immediately. Alternatively, you can serve with sour cream.


Level of difficulty: Easy   Time: 90 minutes, including time to let batter rise Status: Vegetarian /  Parve (or dairy if using milk)

Chicken and vegetable stew

Makes 4-6 servings.

Ingredients

  • 2 onions
  • 2 carrots
  • 2 bell peppers
  • ½ head of cabbage
  • 3 Tbsp. oil
  • 500 gr. chicken breast, cut into medium chunks
  • 8 cloves of garlic
  • 1 red or green chili pepper (if you like it spicy)
  • 1 heaping Tbsp. chicken soup powder (no MSG)
  • ½ tsp. turmeric
  • ½ tsp. cumin
  • Salt and pepper, to taste
  • Around 2 cups of water

Directions:

Peel the onions and carrots. Cut out the pith and seeds of the peppers. Chop the onions. Cut the carrots into rings or cubes. Cut the peppers into small pieces. Cut the cabbage into strips or small pieces. Transfer all the cut vegetables to a bowl. 

Heat the oil in a large, flat pan. Add the chicken pieces and sautΓ© until they have browned, then transfer to a separate bowl. Add more oil, if necessary, then add the onion to the pan and sautΓ©. SautΓ© the carrots and peppers for 3-4 minutes. Add the garlic, spicy pepper and cabbage, and continue sautΓ©ing. 

Add the chicken back to the pan and add seasonings. Mix well, then add water and bring to a boil. (The water should cover all the ingredients.) Cover the pot and lower the heat. Cook for 30 minutes until the vegetables have softened completely. Serve hot with your favorite side dish.

The classic recipe for chocolate balls calls for cocoa powder and melted butter or margarine, depending on whether you want the balls to be dairy or parve ( vegetarian )

Classic chocolate balls with icing

Makes 20 balls.

Ingredients:

  • 300 gr. dry cookies of any sort, leftover cake or biscuits
  • ¾ cup sugar
  • 6 Tbsp. cocoa powder
  • 150 gr. butter or margarine, softened
  • 100 gr. chocolate, broken up into squares
  • 1 Tbsp. chocolate liqueur
  • ¼ cup walnuts, finely chopped 
  • 1/3 cup dairy or parve milk at room temperature

Toppings:

  • Chocolate shavings, colored sprinkles or coconut flakes

If making for adults, you can add:

  • 1 shot glass of espresso
  • 1 Tbsp. whiskey or 1 Tbsp. brandy
  • 1/8 tsp. salt

Hazelnut and chocolate spread: 

  • ½ cup dairy or parve whipped cream or mascarpone cheese
  • 1 cup cocoa powder

  • Directions: 

    Add the cookies or leftover cake to the bowl of a food processor and grind until very fine. 

    Pour the ground cookie crumbs into a large bowl, then add the sugar and cocoa powder. Mix well. Add the softened butter, then mix well. 

    Pour the milk into a small pot and heat over low heat. Add the chocolate and continue mixing until all the chocolate has completely melted.

    Next, pour the chocolate into the cookie crumbs and mix well. Add the ground walnuts and mix again. If the mixture is too soft and the balls cannot retain their shape, put the mixture in the fridge for an hour, then take it out and form balls with a diameter of 3-4 centimeters, or whatever size you want.

    Place the chocolate shavings, sprinkles or coconut on flat plates and then roll the chocolate balls in whichever topping you want. Then, place each ball in a paper cupcake holder. Store the balls in the fridge. 

    To prepare the adult version: Instead of using cocoa, use chocolate spread, whipped cream, espresso, whiskey or brandy and salt. Mix all the ingredients together. You can add some more whipped cream or chocolate spread if necessary. 

    Form balls, then roll them in the cocoa powder and then place them in paper cupcake holders. 

    Level of difficulty: Medium   Time: 1 hour    Status: Dairy or parve (vegetarian)
