CHICKEN PATTIES AND VEGETABLES

Makes 16-20 patties. 

Ingredients 

• 500 gr. ground chicken breast
• 1 large onion, finely chopped
• 5 garlic cloves, crushed
• ½ bunch parsley
• ½ bunch cilantro
• 10 sprigs dill
• 1 slice bread, soaked in water and squeezed well
• 1 tsp. harissa
• 1 Tbsp. pickled lemon spread
• 1-2 Tbsp. olive oil
• 1 egg
• 1 tsp. cumin
• 1 tsp. baking soda
• Salt and pepper, to taste

Directions

Place all the ingredients in a large bowl and mix well. Place the bowl in the fridge for 30 minutes. 

Pour a little olive oil on a griddle pan and heat over medium heat. 

Take little bits of the mixture and form patties with a diameter of 7 or 8 cm. or a bit larger. Place them on the griddle pan and fry them for 2-3 minutes on each side until they turn brown. Serve hot. 

Alternatively, prepare your favorite tomato-based sauce and add the chicken patties to the sauce once you’ve fried them on the griddle pan. Shake the pot gently so that the sauce covers all the patties well.

Ingredients

1 tablespoon canola oil
1 large onion, chopped
2 teaspoons crushed garlic
1 teaspoon dried oregano
3 large carrots, grated
1 cup red lentils (no need to soak)
7 - 8 cups chicken stock 
½ cup chopped parsley
2 cups chopped/sliced cabbage 
4 tablespoons tomato paste
1 teaspoon each salt and sugar
1 teaspoon Worcester sauce 

Directions

1: Heat the oil and stir-fry the onions, garlic, oregano and carrots for a few minutes.
2: Add the remaining ingredients, bring to the boil, then turn down heat and allow to simmer for 25 minutes.
3: Check seasoning and serve.

COOK'S NOTES: Change the flavor profile of this fabulous soup by replacing oregano with equal amount of ground cumin and add a squeeze of lemon before serving. Soup thickens when cold so add extra stock if needed. A low calorie, easy make bowlful of goodness!

Makes 6-8 servings.

Ingredients

• 3 Tbsp. oil
• 3 medium onions, finely chopped
• 1 tomato, cut into pieces
• 2 bell peppers, cut into small pieces
• 5 cloves of garlic, crushed
• 600 gr. beef (shoulder, head or brisket), cut into medium chunks, rinsed and drained
• 4 Tbsp. tomato paste
• ½ Tbsp. spicy paprika
• 1 level tsp. cumin
• ½ tsp. salt
• 5-6 cups water
• 3 cups dry white beans, soaked overnight in water, then rinsed and drained, or frozen
• ½ kg. pumpkin, cut into pieces
• 4 large red potatoes, peeled and cut into medium chunks

Directions 

Heat the oil in a large pot. Add the chopped onion, tomato, peppers and garlic, and mix well. Add the beef, tomato paste, paprika, cumin and salt, and mix well. Pour 4 cups of water on top and bring to a boil.

Add the beans, pumpkin and potatoes, then pour the remaining water on top. The water should cover the beans and vegetables. Stir the pot and then cover and cook over medium heat for 2 hours, or until half of the water has been absorbed and the beans have softened. If needed, you can add another ½ to ¾ cup of water. 

Serve with boiled rice
