While chickpeas may not grow on trees, they play a significant role in Israeli culinary culture.
Whether in the form of hummus spread or falafel, these legumes are rich
in vitamins and minerals, providing excellent support for heart health.
Add in sweet apples, crunchy celery, fresh herbs, and a peanut butter
dressing for a healthy, filling salad delight.
Yields 4-5 servings
Ingredients
2 Tbsp. olive oil
2 cups canned chickpeas
2 tsp. sweet paprika
½ lemon, juice only
2 medium apples
2 celery stalks
¼ cup Craisins
Handful chopped fresh cilantro/parsley
Salt and pepper to taste
Peanut butter dressing:
2 Tbsp. natural peanut butter
2 tsp. water
1 Tbsp. honey or maple syrup
1-2 tsp. lemon juice
½ tsp. soy sauce (optional)
Directions
In
a frying pan, heat olive oil and cook the chickpeas for 4 minutes with
occasional tossing. Add in the paprika and toss the chickpeas until well
coated. Cook for another minute before turning off the heat. Pour in
the lemon juice and the chopped parsley, seasoning with a dash of salt
and pepper. Finely chop the apples and thinly slice the celery stalks
and transfer everything to a serving bowl.
Put
all the dressing ingredients into a separate small bowl and mix until
smooth and well combined, then drizzle it over the salad before serving.
Ingredients
½ Onion
3 cloves of garlic
200g Ground beef
Salt, black pepper, and paprika
Olive oil
10g Parsley
2 Tortilla
Mozzarella cheese
Recipe:
Medium heat
Olive oil
1/2 onion
Thinly dice the onion
Add the onion to the pan
Fry for about 2 minutes
3 cloves of garlic
Tortilla (23cm)
Cut an inch around the tortilla
Dice the leftover tortilla
Add to the pan
Fry for 2 minutes
200g ground beef
Fry for 3-5 minutes
Salt to taste
Black pepper to taste
Paprika to taste
10g parsley or green onion
Chop finely
Add to the pan
Set aside
1 tortilla (23cm)
Mozzarella cheese
Add the meat inside of the tortilla
Sprinkle some more mozzarella cheese
Cover with the small tortilla
Sprinkle more mozzarella cheese on the edges
Fold the sides of the tortilla like this
Cover with a plate to hold the shape in place
Medium heat
Olive oil or butter
Flip the tortilla over using the plate
Transfer the tortilla to the pan
Brush some oil on top
Fry for 3 minutes
Use the plate to flip the tortilla over
Fry for another 2-3 minutes
Done!
So crispy and delicious!

Dough:
3 cups flour, sifted
½ cup orange juice or milk
1 egg (or 1 egg yolk)
½ cup powdered sugar
200 gr. butter or margarine
1 tsp. rum concentrate
1 packet vanilla sugar
1 packet baking powder
Filling:
1 container of date spread
1 cup walnuts, pecans, or candied pecans, ground
½ cup chocolate chips
½ cup halva, crumbled
2 tsp. cinnamon
¼ tsp. ground cloves
Egg wash:
1 egg, beaten, plus 1 Tbsp. water
Toppings:
½ cup sesame seeds
¼ cups powdered sugar
Directions:
To prepare the dough:
Place the flour in the
bowl of an electric mixer. Form a well in the center, then add the
orange juice or milk. Add the egg, powdered sugar, butter or margarine,
rum concentrate, vanilla sugar, and baking powder. Mix on medium speed
until the dough falls away from the sides of the bowl. If necessary, add
a little more flour. Alternatively, you can mix by hand. Let the dough
rest in the fridge for an hour.
Separate
the dough into three equal sections. Flour your work surface, then roll
out each section into a rectangle that is ½ cm thick. Spread 1/3 of the
filling on each section, then add 1/3 of the nuts, chocolate, and
halva.
Sprinkle
a little cinnamon on top, then roll up the dough into a tube, starting
with the side closest to you. Seal the edge well. Prepare the other two
in the same fashion.
Place
the three rolled-up dough tubes onto a greased pan, or on a pan covered
with baking paper, and brush with egg wash. Take a knife and gently
make light indentations where you’ll be cutting the loaf into slices.
Sprinkle sesame seeds on top, then bake in an oven that has been
preheated to 180° for 30 minutes, until the dough turns golden brown.
Let
the loaves cool down. Sprinkle powdered sugar on top, then slice the
loaf. Place the cookies into a plastic container that can easily be
transported to the soldiers serving on the front lines.
