I'm gonna show you how to make the world's most famous tuna sandwich, which is really the world's most famous tuna salad, the Niçoise, stuffed and pressed inside a whole loaf of bread. According to people who consider things, this is considered the ultimate picnic sandwich, since it has to be made ahead, and the longer it sits in its own juices, the better.

 Zesty Chicken With Basil & Almonds

See Cook's Notes before proceeding.3 frozen chicken fillets*3 tablespoons olive oil1/2 teaspoon chili flakesZest of one, large lemonMaldon salt and coarse black pepper1 teaspoon crushed garlic1/4 cup basil leaves1/4 cup almonds with skin on, roughly chopped2 tablespoons lemon juice (optional)2 tablespoons soya sauce (optional)Lightly cooked green beans or broccoli florets (optional)* Can use more but then increase remaining ingredients accordingly. 1: Slice chicken breasts on the slant using a sharp knife which is easiest to do while slightly frozen.2: Heat oil in a large frying pan or wok and add chicken, chili, lemon zest, salt, pepper, and garlic.3: Toss the chicken for 2 to 3 minutes then add the basil and almonds and toss for another couple of minutes till chicken is just cooked and nuts and herbs are fragrant.4: Add lemon juice, soya sauce and just cooked green beans or broccoli if you choose, toss through, and serve over  white or brown rice. COOK'S NOTES: I add the soya sauce and lemon juice for extra flavor and moisture but the original - without these additions - is absolutely delicious too. Feel free to increase the nuts, basil or lemon zest as it only makes an already wonderful dish even better. Lemon slices are for illustration purposes only.

Words & Brush Recipe Corner: Cheese Burekas

 Pascale's Kitchen, Baked treats: Cheese Burekas

I always try to have some small sweet or savory treats on hand to nibble on as we’re lounging around the house on Saturday

CHEESE BUREKAS

Makes 12-16 burekas.

Ingredients

  • 1 package puff pastry, chilled (or square pieces of puff pastry)

Filling:

  • 200 gr. white spread cheese 5% (or ricotta, cottage, Canaan)
  • 100 gr. feta cheese, crumbled (or Bulgarian, Roquefort)
  • 100 gr. yellow hard cheese (or mozzarella, cheddar, Gouda)
  • Salt and pepper, to taste
  • 1 egg

Toppings:

  • 1 egg, beaten with 2-3 drops of oil
  • ¼ cup light sesame seeds
  • ¼ cup dark sesame seeds

Directions:

Heat your oven to 190°-200°. Place a sheet of baking paper on a tray, then spray with oil spray. Add all the filling ingredients to a medium bowl and mix well. 

Spread the puff pastry on your work surface. Then, with a knife or pizza cutter, cut the pastry dough into 10 cm. x 10 cm. squares, or a bit larger. Just make sure they are all the same size. It’s best to keep any extra pastry dough in the freezer while you’re preparing the burekas. (You can buy packages of preprepared puff pastry squares if you want to cut down on preparation time.)

Take a spoonful or two of the filling and place it in the center of the dough square. Take one corner and fold it over to the opposite corner, making sure there’s no filing near the edges. Seal all the edges of the triangle. You can also take a fork and press down gently into the edges to seal them. Prepare the rest of the burekas in the same way. 

Arrange the burekas on the baking tray, making sure that there’s plenty of space between each one. 

Break the egg into a glass, then add the oil and beat well. Brush the egg wash on all the burekas, then sprinkle light and dark sesame seeds on top.

Bake in the preheated oven for 20 minutes or until they’ve browned nicely. Serve hot with salads and hard-boiled eggs.
