Words & Brush Recipe Corner: Crispy hasselback potatoes

Crispy hasselback potatoes

Makes 12 servings.

Ingredients

  • 15 medium-sized white potatoes
  • ½ cup olive oil
  • 100 ml. white wine
  • 300 ml. soup stock
  • 1 Tbsp. sweet paprika
  • 1 tsp. smoked paprika
  • 1 Tbsp. ground zaatar
  • 1 tsp. black pepper
  • 1 Tbsp. kosher salt

Topping:

  • Thyme or zaatar leaves

Directions 

Rinse the potatoes well, then dry them off. Slice the potatoes in half lengthwise, and then make thin slices, but not all the way through, so that it stays all connected on the bottom, like a fan.

Mix the liquids and the spices together and spread over the potatoes.

Line a tray with baking paper and arrange all the potatoes on top of it, with the cut side facing down. Pour the rest of the sauce on the potatoes. Cover with baking paper, and then foil on top.

Bake in an oven that has been preheated to 180° for 1 hour. Remove the covering and broil for a few minutes until they turn golden brown. Serve hot.

Level of difficulty: Easy.  Time: 90 minutes.   Status: Vegetarian

Homemade Fish & Chips

INGREDIENTS
  

For the Chips:

  • About 1 Large Potato per person
  • Salt

For the Fish Batter:

  • 24 ounces White Fish like Cod, Halibut, Tilapia, Bass, Grouper (or whatever is available in your market)
  • 4 ounces All-Purpose Flour
  • 4 ounces Rice Flour
  • 3 ounces very fine Corn Meal
  • 2 tablespoons Corn Starch
  • 2 tablespoons Baking Powder
  • 1 tablespoon Creole Seasoning
  • 1 tablespoon Salt
  • 1 bottle of Beer

INSTRUCTIONS
 

CHIPS:

  • Cut the potatoes into perfect julienne (as per video) rinse under water until the water comes out clear, arrange them into a cookie sheet and place in the fridge or the freezer for about 1 hour until very cold.

First Fry:  Preheat the Vegetable Oil to 280ΒΊF/137ΒΊC  

  • Fry your fries for about 10 minutes until light golden brown. Remove them from the oil and refrigerate  for another 60 to 90 minutes (or as long as you need) until real cold.

Second Fry: Preheat the Vegetable Oil to 365 ΒΊF /185 ΒΊC  

  • Dip the fries a second time until golden brown.

THE FISH BATTER:

  • Mix all the dry ingredients and add the beer until you have the consistency of a thick pancake batter. Mix well to make sure you do not have lumps.

COOK THE FISH:

    Preheat Vegetable Oil to 365 ΒΊF /185 ΒΊC

    • Dredge the fish in cornstarch or tapioca powder to dry it and dip in the batter.  Remove excess batter and dip in the hot oil.
