 Middle Eastern Lentil and Vegetable Soup

Ingredients:

1 large onion, chopped
2 large carrots, grated
1/2 cup chopped celery leaves
2 tablespoons canola oil
1 cup red lentils (no need to soak)
6 cups parve chicken stock
Salt and pepper
1 teaspoon ground cumin
½ teaspoon turmeric
2  tablespoons fresh lemon juice

GARNISH (optional but adds wonderful flavor)
2 tablespoons canola oil
2 large onions, thinly sliced in rings
1 teaspoon crushed garlic
1 teaspoon ground coriander spice
2 teaspoons dried mint
1/2 teaspoon dried chilli flakes

Directions:
1: Saute chopped onion, carrot and celery leaves in 2 tablespoons oil till soft.
2: Add the lentils, stock, and salt and pepper to taste and simmer for 30 to 40 minutes till lentils are soft.
3: Stir in the cumin and lemon juice.
4: While soup is cooking, fry sliced onion oil over medium heat till lightly golden and stir in garlic, coriander, dried mint and chilli.
5: Serve soup garnished with a spoon of fried onions in the centre of each bowl or serve as is.

COOK'S NOTES: Dried mint is not easy to find but super easy to make. A thrifty way to preserve leftover fresh mint as it's only ever sold in huge bunches. Break off leaves and place on a paper towel, cover with a second paper towel and microwave for 1 minute. Check to see if leaves are dry and return to the microwave for 30 seconds if not yet dried. Crumble between your fingers and store in a spice bottle. Great for adding to salad dressings, cheese, and fruit syrups.

Ring in 2025: A New Chapter

 


 


Happy New Year!  Leaving all the stuff behind and may it be a great New Year.



 






 Ah a new hope, a new beginning.  So much confetti everywhere and the tree is still up.  A Happy New Year to you and all.  Take that break today let the day go by.  











          Did you make any resolutions?  This will be the year to finish my book and get to publishing it with illustrations. Start that new job search and make the change you are seeking.
Perhaps sleeping in before the new week and usual routine.

  Maybe be more healthy, try something new,  learn a new language or work on that project that's been simmering for years. Get a new degree or certificate for self enrichment or for a career change for the better.   Be more creative.  Lots of us don't realize we are being creative.  Not everyone specializes in just art or writing, or poetry and so forth. 










 Finish that project in progress and remember finish that piece strong whether a story, a book, an artwork or anything else that suits your creative fancy.  We might be moved in by now at our new home, and I am looking at learning how to make pasta, maybe take a cooking class how to make sushi as I would prefer a chef I can ask questions and not just watch an online class.   


Try Tai Chi, lots of great benefits with body, mind, and spirit. 













 

As winter settles in, many days just seem like the same day with the greyness and the snow, and the cold sky with barren tree branches reaching the sky.
























                Remember, this is a new year and everyone on W&B and beyond wishes you the very best year and it's a new beginning for everyone to start afresh.  Kick some old habits.

Words & Brush Recipe Corner: Crispy Baked Chicken Breasts

 Crispy Baked Chicken Breasts

Yields 6 Servings. 


Ingredients:

  • 1 kg. of chicken breast filet
  • 2 eggs
  • 1 cup non-dairy milk
  • 1 tbsp vinegar
  • 3 cups panko/corn flake crumbs
  • 2 tbsp. garlic powder
  • 2 tbsp. onion powder or flakes
  • 1 tbsp. sweet paprika
  • 2 tsp. salt, divided
  • 1 tsp. pepper
  • 2 tbsp. olive oil or baking spray


Directions:

Line a large, flat baking tray with parchment paper and preheat the oven to 190°C/375°F. For this recipe, I prefer using chicken filet strips, as they save time by skipping the cutting step, but boneless chicken breasts work just as well – just slice them into strips.

Prepare two bowls: one for the wet ingredients, and one for the dry. In the first bowl, whisk together the eggs, non-dairy milk, vinegar, and 1 tsp. of salt. In the second bowl, mix the breadcrumbs with the spices. 

To coat the chicken: Place a few strips into the egg mixture, gently tossing to ensure they are fully covered. Transfer the strips one by one into the crumb mixture, coating them evenly. Place the breaded chicken strips on the prepared baking tray, spacing them at least one inch (3 cm.) apart. Once the tray is full, lightly spray the chicken with oil spray or drizzle with olive oil.

Bake the chicken on the second shelf from the top, uncovered, for 30 minutes. Serve warm with a variety of dips on the side for a delicious and easy meal.

Words & Brush Recipe Corner: Sweet Potato Latkes

Sweet Potato Latkes

Yields 20-24 Latkes. 


Ingredients:

  • 2 large or 3 small sweet potatoes
  • 1 onion
  • 5 eggs
  • 1 cup flour (or gluten-free substitute)
  • 1 tsp. baking powder
  • 1 tsp. salt
  • ½ tsp. pepper
  • 3 tbsp. lemon juice (freshly squeezed is best)
  • 2 tbsp. minced parsley (optional)
  • Oil for frying (plus 2 small pieces of carrot)



Directions:

Peel the sweet potatoes and onion, then use a fine grater or the shredding blade of your food processor to grate them. Transfer the grated mixture to a large bowl and add the remaining ingredients, mixing thoroughly to ensure there are no clumps of flour in the batter.


Heat about ½ cup of oil in a large frying pan over medium heat. Using a spoon and your hands, scoop about 2 tablespoons of the batter and shape it into a loose ball. Carefully place it in the pan, then flatten it gently with the back of the spoon to form a disc. Repeat this process, frying 6 or 7 latkes at a time, making sure not to overcrowd the pan.


Fry the latkes for 3 to 4 minutes on each side, until golden and crisp. Remove them with a slotted spoon and place them on a paper towel-lined tray or bowl to drain excess oil. For best results, stand the latkes upright so the oil drains more effectively. 


Add about ¼ cup of oil to the pan between batches as needed. After the first batch, you can toss in two small chunks of carrot to help prevent the oil from burning.


Serve the latkes warm with sour cream or applesauce for a classic and delicious Hanukkah treat!
