Words & Brush Recipe Corner: DATES STUFFED WITH WALNUTS AND COVERED IN WHITE CHOCOLATE.

 DATES STUFFED WITH WALNUTS AND COVERED IN WHITE CHOCOLATE.

This is the time of year to prepare fun treats that are cold and delicious to eat on a hot summer day. It’s the season when we try to use the oven as little as possible and focus on cold dishes.

 DATES STUFFED WITH WALNUTS AND COVERED IN WHITE CHOCOLATE.

Makes 10-12 pieces.

Ingredients

  • 10-12 large Medjool dates
  • 10-15 walnut halves

Icing:

  • 100 gr. white chocolate
  • 3 tsp. oil

Toppings:

  • ¼ cup slivered almonds
  • ¼ cup candied nuts
  • Colored sprinkles

Directions

Cut the dates lengthwise just enough so you can extract the pit, making sure not to cut all the way through. Stick half of a walnut inside a date, then gently press the date closed around the nut. Prepare the rest in the same fashion.

Place the chocolate in a glass bowl and heat a few seconds at a time in the microwave until it has melted. Stir until smooth.

Dip the top half of the dates in the melted white chocolate, then place them on a tray covered with baking paper. Sprinkle toppings on the dates, then place the tray in the fridge to let the chocolate set. Serve the stuffed dates in muffin liners. 

Level of difficulty: Easy, Time: 25 minutes

Perfect For Summer Celery Soup

Ingredients

2 tablespoons oilKnob of butter (optional)5 large sticks of celery, chopped1 large onion, chopped2 large potatoes, peeled and cubed1/2 cup chopped parsley3 cups vegetarian style chicken stock1 bay leaf1 teaspoon dried basilPinch chili flakes (optional)Salt to tastePinch of sugar1/2 cup cream/non-dairy cream

Directions

1: Heat the oil and butter (if using) and saute the celery, onion, potatoes and parsley for 5 minutes, then add remaining ingredients, apart from cream, cover and simmer for 20 minutes or until the vegetables are very soft.

2: Allow to cool slightly, remove bay leaf, and process till smooth then stir in cream and chill very well before serving. Quite amazingly delicious.
