WATERMELON & CHERRY SALAD WITH ZESTY DRESSING

This week I watched a reel on how to pick the perfect watermelon. Get it right using the RYT method and remember these 3 easy letters for reference.
R = Round as a round watermelon is far more flavorful than an oval shape.
Y = Yellow as you should always look for a yellow field patch that shows where the watermelon rested on the ground while ripening. Deeper yellow spots indicate riper, sweeter fruit.
T = Threading which refers to the lines on a watermelon skin. These show the watermelon has been repeatedly pollinated. Look for a textured watermelon with matt skin and multiple lines/webbing to guarantee sweetness.
Of course, at the start of the season, even the most carefully selected fruit can do with a helping hand. And this zesty dressing delivers just that.
Elevate a simple watermelon platter into a bona fide fruitful dessert and take the guesswork out of fresh produce shopping.
WATERMELON & CHERRY SALAD WITH ZESTY DRESSING
4 - 5 cups watermelon cubes
1 cup fresh or frozen cherries
2 tablespoons lime or lemon juice
1 teaspoon lime or lemon finely grated zest
2 teaspoons honey (adjust to taste)
1 tablespoon finely chopped mint or basil
Optional: pinch of Maldon salt to enhance sweetness
Optional: 1 - 2 cups of quartered ripe strawberries
1: Whisk the lime/lemon juice with the honey till it dissolves then stir in the chopped herbs.
2: Combine the fruit in a bowl or platter and drizzle over dressing 15 minutes before serving to let the flavors infuse.
3: Finish with a pinch of Maldon salt to bring out the flavor.
