Gingerbread White Choc Chip Blondies, whipped together in minutes using easy-to-find ingredients, this go-far recipe makes a full tray of fudgy, chocolate chip-studded goodness, with winter warming spices.It's easily made and can be served slightly warm with ice-cream as a perfect wintery dessert and is a definite keeper.


Ingredients 

2 cups flour1 ¼ teaspoon bicarbonate of soda1 teaspoon salt1 1/2 teaspoons ground ginger1 ¼ teaspoon ground cinnamon¼ teaspoon ground cloves200g butter/margarine1 ¼ cup light brown sugar½ cups white sugar1/4 cup silan (date syrup) or golden syrup2 large eggs plus 1 egg yolk2 teaspoons vanilla½ - 3/4 cup white chocolate chipsMaldon salt to garnish

Directions:1: Mix the flour, bicarbonate of soda, ground ginger, cloves, cinnamon and salt together.2: Melt butter/margarine in the microwave, stir in the two sugars, silan and vanilla then add eggs and yolk. Mix into the flour mixture.3: Stir in chocolate chips then scrape batter into a standard rectangular baking tray, sprinkle over Maldon salt, and bake at 180 C for approximately 27 minutes till just done and center is just crusted over. You want a fudgy consistency like a brownie so be careful not to overcook.4: Cut into squares when cool.COOK'S NOTES: I use the standard foil tray measuring 25 cm x 30 cm so this really goes far. You could go slightly smaller, but the bicarbonate of soda can cause the batter to bubble over if too full. Blondies may sink slightly after baking which is to be expected. Delicious served slightly warm!

Grilled Ginger Lime Chicken Breasts

Since boneless skinless chicken breasts are both insanely popular and insanely boring on their own, I’m always looking for ways to spice them up with interesting flavor combinations. Here I use two techniques. First, a simple marinade with lime juice and ginger, that gives the chicken a spicy, tangy, umami, flavor. Second, I cook the chicken breasts on the grill, with gives the breasts a nice char on the outside, and helps to caramelize the sugars in the marinade. Rather than a plain jane piece of chicken, you’ll get something exciting enough to serve anytime from special occasions & backyard BBQs!


Prep Time 25 minutes, Cook Time 20 minutes, Total Time 45 minutes

Key Steps For Cooking Grilled Ginger Lime Chicken Breasts

  1. The biggest mistake with cooking chicken breasts is over cooking them, as they dry out quickly. Until you’re practiced at telling them they are cooked through, get an instant read meat thermometer, and cook until they just reach 160 degrees.
  2. I nearly always advocate cooking at very high heat; the exception is when I’m using marinades as, the sugars can burn easily. Start these chicken breasts out over medium high heat
  3. Let the chicken marinate for at least 3 hours…up to 8 is even better

Ingredients

  • 2 -3 Boneless skinless chicken breasts
  • 1 knob Ginger
  • 1 - 2 Limes
  • Olive oil
  • Soy sauce
  • Sesame Oil
  • Garlic
  • Honey

Recipe for Grilled Ginger Lime Chicken Breasts

  • Make the marinade by combining (measures are approximate and don’t matter too much)
  • Two cloves of minced garlic
  • 1 tablespoon of grated fresh ginger
  • Zest of one lime
  • Juice of one lime
  • 2 teaspoons honey
  • 1 teaspoon sesame oil
  • 1 tablespoons soy sauce
  • 3 tablespoons olive oil
  • Mix all the above ingredient together and pour into a large zip lock bag
  • Add 2 – 3 chicken breasts and gently shake to distribute the marinade
  • Allow the chicken to marinate up to 8 hours
  • Remove the chicken from the marinate about 30 minutes before cooking, and season both sides with salt and pepper
  • Heat your grill over medium heat
  • Lightly coat the chicken breasts with olive oil, and lay down on the grill grates
  • Don’t touch or move the chicken, instead close the grill lid and let them cook for about 3 minutes
  • Return the the grill and gently lift and flip the chicken breasts (the cooked side should be browned with grill marks)
  • Close the lid again, and cook for another 3-4 minutes
  • Thinner chicken breasts will be cooked through by now, once cooked you should see no pink on the side, and the breast should be firm to the touch
  • If you’re unsure the chicken is cooked through use a meat thermometer; you want the thickest part to be 160 degrees
  • Remove the chicken from the grill, and allow it to rest for 2 – 3 minutes and then serve it up

Ring in 2023 Open Thread: A New Beginning

 


 


Happy New Year!  Leaving all the stuff behind and may it be a great New Year.



 














           Did you make any resolutions?  Perhaps sleeping in  before the new week and usual routine.  THinking about it makes me even more unmotivated.

  Maybe be more healthy, try something new,  learn a new language or work on that project that's been simmering for years. Get a new degree or certificate for self enrichment or for a career change for the better.   Be more creative.  Lots of us don't realize we are being creative.  Not everyone specializes in just art or writing, or poetry and so forth. 










 Finish that project in progress and remember finish that piece strong whether a story, a book, an artwork or anything else that suits your creative fancy.  We might be moved in by now at our new home, and I am looking at learning how to make pasta, maybe take a cooking class how to make sushi as I would prefer a chef I can ask questions and not just watch an online class.   


Try Tai Chi, lots of great benefits with body, mind, and spirit. 













 

As winter settles in, many days just seem like the same day with the greyness and the snow, and the cold sky with barren tree branches reaching the sky.
























                Remember, this is a new year and everyone on W&B and beyond wishes you the very best year and it's a new beginning for everyone to start afresh.  Kick some old habits.
