Curried Vegetable Samosa Pies

Curry in a heatwave?

You may be surprised to hear that it's just what the doctor ordered.

Curry dishes - and especially those that contain healing turmeric -  are proven to speed up blood circulation which consequently cools you down.

How fortunate that my most recent discovery - and my family's currently most requested dish - is appropriately curry-based.

Curry up and put these absolute fabulous flavors, magically-made pastry, and refreshing health benefits to the test!



Ingredients 

AMAZING PASTRY*

1 cup water

170 grams butter

2 3/4 cups plain flour

2 teaspoons salt

1 teaspoon paprika OR curry powder

FILLING

Canola oil

1 large onion, chopped

2 teaspoons crushed garlic

1 tablespoon grated ginger**

1 tablespoon curry paste OR 2 teaspoons curry powder

2 teaspoons crushed coriander seeds (optional)

1 1/2 cups frozen peas and carrots

1 - 2 cups boiled, lightly crushed potato

Lemon zest or squeeze of lemon

Salt to taste
1 - 2 tablespoons chopped coriander leaves
Egg to brush over 

*Substitute with puff pastry if you have to but this is the most amazing, flaky pastry with unlimited uses and is so easy to make.

** Or 1 teaspoon ground ginger

Directions
1: Heat the water and butter in a small pot until fully melted. 
2: Whisk the flour, salt and paprika/curry powder together, pour in a little of the water mixture and mix to make a paste, then add remaining liquid and mix in with your fingers to make a slightly oily dough. Wrap in plastic and refrigerate for 2 hours till cool.
3: Fry the onions, garlic and grated ginger till softened then add curry paste/powder and crushed coriander seeds if using.
4: Add the frozen peas and carrots, cooked potato, lemon, herbs, and seasoning and mix to make a flavorful vegetable filling. Allow to cool which can be hurried up in the freezer.
5: Break off a golf ball of pastry, roll into a round, place a heaped tablespoon of mixture in the middle, and then fold over to make a half-circle.
6: Crimp edges with a fork - don't worry if they are a bit rough - then place on paper lined tray and brush with egg wash.
7: Repeat with remaining pastry and filling then bake at 200 C for approximately 20-25 minutes till golden. Absolutely incredibly delicious served warm or at room temperature. 

COOK'S NOTES: These are wonderful just as they come but I serve with a fabulous herb chutney. Blend 1 cup mint leaves, 2 cups coriander leaves, chilli flakes or paste to taste, chunk fresh ginger, 1 tablespoon of sugar, 1 tablespoon lemon juice, 1 teaspoon cumin and water to make a sauce. Amazing with all curries.

I'm sure this pastry would work with margarine too. It's amazing as a pastry for beef pies or empanadas. I personally love the lemony flavor of crushed coriander seeds - crush in a food processor or with rolling pin - and use these in all curry dishes. Leave off egg to make these vegan. Samosas freeze perfectly. An absolute must-make and easily adaptable recipe.
