4 veal chops 1 cup potato starch or wheat flour 2 eggs, beaten 2 cups unseasoned breadcrumbs ¾ tsp. salt ½ tsp. ground black pepper 2 Tbsp. granulated garlic ½ tsp. paprika ½-¾ cup oil, for frying 1 large onion, sliced into rings
Directions:
Prepare three shallow plates. Place the potato starch or flour on the first plate. On the second plate, place the beaten eggs and season with ¼ tsp salt and a dash of black pepper. On the third plate, combine the breadcrumbs, granulated garlic, paprika, ½ tsp salt, and ½ tsp black pepper.
Heat the oil in a large frying pan over medium heat. Dip each veal chop first into the potato starch or flour, then into the egg mixture, and finally into the bread crumbs, making sure it is well coated on all sides.
Place the breaded veal chops in the hot oil and fry for 8-10 minutes on the first side. Flip and fry for another 8 minutes, or until golden and crisp on the outside and cooked through.
While the veal is frying, add the onion slices to the same pan. Fry until golden and crisp, removing them as they are ready.
Transfer the veal chops to a serving platter, scatter the crispy onions over the top, and serve warm.
Enjoy!
