Firecracker Salmon is simple to prepare and guaranteed to enhance rather than mask salmon's subtle flavour, this marinade works equally well on chicken breasts too.Enjoy double the serving opportunities as you liven up summer dining with dinner-table firecrackers.Experience an explosion of great taste in every bite!



800 grams salmon filletsChopped chives/spring onion to garnishSesame seedsMARINADE2 teaspoons crushed garlic1 tablespoon grated fresh ginger*3 tablespoons olive oil3 tablespoons soy sauce2 tablespoons brown sugar1/2 - 1 teaspoon chilli flakes1 tablespoon Sriracha/chilli sauce1 teaspoon coarse black pepper* Keep a large, peeled chunk of ginger in the freezer and grate from frozen. That way you have fresh ginger available always.1: Whisk marinade ingredients together in a non-metallic, shallow baking dish, add salmon fillets and turn to coat evenly on both sides, then cover and refrigerate for 2 hours or overnight if time permits.2: Pre-heat your oven to 190 C and bake for 15-17 minutes depending on the thickness of the fillets. Be sure not to overcook as it will continue cooking in the residual heat even when removed from the oven. 3: Garnish with spring onion/chives and sesame seeds and serve with side-servings of your choice. This is best served from the oven but is still delicious when cold. You honestly can't go wrong with salmon!

July Open Thread

 


  


Summer's still in full swing, and that also brings about our country's birthday and

how we celebrate is a gift to us by reflecting on the historical events that happened throughout our history.  









Keep the fun, the laughter and togetherness













Enjoying the homemade cookouts, the laughter and make sure there are enough
citronella candles to keep the flies and insects away.  















Add the sweets and cheer wherever you go













Kick back and remember the good days of a pool party















As the light fades in the west, we wait just a little longer.  On a warm summer night in the South this was the place.  Watch the whole thing, with Elvis "Dixieland" at the end.  This is the famous Laser Show.  They would shine the colored strobes to trace out the horses on the carvings.  We all know things are a bit scary, but hold true, we are moving forward.  God bless the USA.















Or some may just want a night to see the fireworks
















Don't forget the red white and blue berry trifle treats.




Now an easy way to do this.  Get a sponge cake from the store, break it
into pieces, put in the glass like a parfait.  Things are in a rush these days and though a homemade treat is always the best,
this will help to make it much easier.

Words & Brush Recipe Corner: Delicious Strawberry Pancakes

 Delicious Strawberry Pancakes

Simple step by step instructions from start to finish


Ingredients

  • 250g / 9oz Plain or all purpose flour
  • 300mls / 300g Milk
  • 45g /3tbls Vegetable oil or melted butter
  • 1 Large egg
  • 3tsp / 15g Baking powder
  • 1 tsp Vanilla extract
  • 1g / ¼tsp Salt
  • 250g / 9oz Fresh Strawberries
  • 30g / 1oz Granulated sugar
  • Butter and oil for frying
  • Maple syrup or honey

Method

  • Serves 4 adults or 6 children.
  • Start by washing/hulling/cutting the strawberries into small pieces.
  • In a small bowl add the sugar to the strawberries and mix until the sugar has completely dissolved, set it aside to macerate for 10 minutes.
  • In a large bowl add the flour and salt; sift in the baking powder to remove any lumps.
  • Add the egg, milk, oil or melted butter, and vanilla extract, mix to a smooth lump free batter.
  • Heat up a large frying pan on a medium heat.
  • Add a little of the butter and oil combination ( see the video for details) and ladle in as much or as little of the batter to suit the size of the pancakes you require, fry for 2 to 3 minutes on either side.
  • Stack the pancakes on a warm plate with the strawberry filling in between each pancake approximately 3 to 4 high.
  • Top the stack off with more of the strawberries, Drizzle with honey or maple syrup.
  • Enjoy
