Makes 35-40 cookies.

Ingredients

Dough:

  • 3 cups flour, sifted
  • ½ cup orange juice or milk
  • 1 egg (or 1 egg yolk)
  • ½ cup powdered sugar
  • 200 gr. butter or margarine
  • 1 tsp. rum concentrate
  • 1 packet vanilla sugar
  • 1 packet baking powder

Filling:

  • 1 container of date spread
  • 1 cup walnuts, pecans, or candied pecans, ground
  • ½ cup chocolate chips
  • ½ cup halva, crumbled
  • 2 tsp. cinnamon
  • ¼ tsp. ground cloves

Egg wash:

  • 1 egg, beaten, plus 1 Tbsp. water

Toppings:

  • ½ cup sesame seeds
  • ¼ cups powdered sugar
Directions: 

To prepare the dough:

Place the flour in the bowl of an electric mixer. Form a well in the center, then add the orange juice or milk. Add the egg, powdered sugar, butter or margarine, rum concentrate, vanilla sugar, and baking powder. Mix on medium speed until the dough falls away from the sides of the bowl. If necessary, add a little more flour. Alternatively, you can mix by hand. Let the dough rest in the fridge for an hour. 

Separate the dough into three equal sections. Flour your work surface, then roll out each section into a rectangle that is ½ cm thick. Spread 1/3 of the filling on each section, then add 1/3 of the nuts, chocolate, and halva. 

Sprinkle a little cinnamon on top, then roll up the dough into a tube, starting with the side closest to you. Seal the edge well. Prepare the other two in the same fashion. 

Place the three rolled-up dough tubes onto a greased pan, or on a pan covered with baking paper, and brush with egg wash. Take a knife and gently make light indentations where you’ll be cutting the loaf into slices. Sprinkle sesame seeds on top, then bake in an oven that has been preheated to 180° for 30 minutes, until the dough turns golden brown. 

Let the loaves cool down. Sprinkle powdered sugar on top, then slice the loaf. Place the cookies into a plastic container that can easily be transported to the soldiers serving on the front lines.

Rice with Pecans and Onions

Serves 6-8.


Ingredients

  • 3 Tbsp. oil
  • 2 cups Persian rice, rinsed
  • ½ tsp. salt
  • 4 cups boiling water

Onion mixture:

  • 4 Tbsp. oil
  • 2 large onions, thinly sliced
  • 100 gr. slivered almonds
  • 50 gr. raisins
  • 50 gr. pecans
  • ½ tsp. cinnamon
  • ½ cup honey
  • 3-4 cups water
Directions

Heat the oil in a medium pot, then add the rinsed rice and sautΓ© until it starts to turn golden. Add the salt, stir, and then pour in the boiling water and cook for 1 minute. Lower the heat and cook for 15-20 minutes. 

To prepare the onion mixture: Heat the oil in a large pan and add the onion pieces. SautΓ© the onions until they turn golden brown. 

Add the rest of the onion mixture ingredients, give them a stir, and then continue cooking for another 5-6 minutes over low-medium heat. Transfer the mixture to a serving dish and serve with the rice.

Ring in 2024: A New Beginning, A new Hope

 


 


Happy New Year!  Leaving all the stuff behind and may it be a great New Year.



 

















           Did you make any resolutions?  Perhaps sleeping in  before the new week and usual routine.  THinking about it makes me even more unmotivated.

  Maybe be more healthy, try something new,  learn a new language or work on that project that's been simmering for years. Get a new degree or certificate for self enrichment or for a career change for the better.   Be more creative.  Lots of us don't realize we are being creative.  Not everyone specializes in just art or writing, or poetry and so forth. 










 Finish that project in progress and remember finish that piece strong whether a story, a book, an artwork or anything else that suits your creative fancy.  We might be moved in by now at our new home, and I am looking at learning how to make pasta, maybe take a cooking class how to make sushi as I would prefer a chef I can ask questions and not just watch an online class.   


Try Tai Chi, lots of great benefits with body, mind, and spirit. 













 

As winter settles in, many days just seem like the same day with the greyness and the snow, and the cold sky with barren tree branches reaching the sky.
























                Remember, this is a new year and everyone on W&B and beyond wishes you the very best year and it's a new beginning for everyone to start afresh.  Kick some old habits.

EASY CHANA MASALA (CHICKPEA CURRY)

Chana Masala, also known as channay or chole masala, is a popular dish in Indian cuisine made with chickpeas (also called chana or chole) and a blend of spices.




This one pot chana masala/ chickpea curry is vegan, gluten free and can be customized according to your taste. The spices used can vary but typically include cumin, coriander, turmeric, and garam masala. The dish is usually served with rice or bread (such as naan or roti) and can be made with a tomato-based sauce or a creamy sauce. It is considered a vegetarian dish, and also a staple food in many regions of India.

INGREDIENTS
  

  • 2 cups chickpeas, canned or boiled
  • 4 tbsp vegetable oil
  • 1/2 cup onions, diced
  • 1 tbsp ginger paste
  • tbsp garlic paste
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin seeds or powder
  • 1/2 tsp turmeric powder
  • to taste
  • 1 tsp amchur powder
  • 1 tsp nigella seeds
  • 1/2 tsp chili flakes
  • 1/2 cup tomato puree
  • 1/2 -1 cup water
  • cilantro and green chili for garnishing

INSTRUCTIONS
 

  • Heat a large pot over medium heat. Once hot, add oil and diced onions. cook for few minutes or until translucent.
  • Add ginger and garlic paste and saute for few minutes.
  • Now add red chili powder, turmeric powder, coriander powder, cumin, salt, nigella seeds, chili flakes and amchur powder and cook for 5-6 minutes. avoid burning the spices, add some water if the spices are sticking to the pan.
  • Add tomato puree and cook for few more minutes .
  • Add drained canned chickpeas and mix everything together.
  • Now add half to one glass of water depending on the thickness of the gravy, cover and cook for 5 minutes.Remove from heat.
  • Garnish with cilantro and green chilies. serve with naan bread or rice.

NOTES

  • Refrigerate: Chana masala leftovers can be stored in the fridge for up to four days.
  • Freeze:  Freeze the chana masala in an airtight container for up to four months.
  • Reheat:  Reheat the frozen chana masala in a microwave or let it defrost in the refrigerator, then reheat in a saucepan on the stovetop.
