Chicken and vegetable stew

Makes 4-6 servings.

Ingredients

  • 2 onions
  • 2 carrots
  • 2 bell peppers
  • ½ head of cabbage
  • 3 Tbsp. oil
  • 500 gr. chicken breast, cut into medium chunks
  • 8 cloves of garlic
  • 1 red or green chili pepper (if you like it spicy)
  • 1 heaping Tbsp. chicken soup powder (no MSG)
  • ½ tsp. turmeric
  • ½ tsp. cumin
  • Salt and pepper, to taste
  • Around 2 cups of water

Directions:

Peel the onions and carrots. Cut out the pith and seeds of the peppers. Chop the onions. Cut the carrots into rings or cubes. Cut the peppers into small pieces. Cut the cabbage into strips or small pieces. Transfer all the cut vegetables to a bowl.

Heat the oil in a large, flat pan. Add the chicken pieces and sauté until they have browned, then transfer to a separate bowl. Add more oil, if necessary, then add the onion to the pan and sauté. Sauté the carrots and peppers for 3-4 minutes. Add the garlic, spicy pepper and cabbage, and continue sautéing.

Add the chicken back to the pan and add seasonings. Mix well, then add water and bring to a boil. (The water should cover all the ingredients.) Cover the pot and lower the heat. Cook for 30 minutes until the vegetables have softened completely. Serve hot with your favorite side dish.

Words & Brush Recipe Corner: Chocolate balls

Pascale's Kitchen: Chocolate balls

The classic recipe for chocolate balls calls for cocoa powder and melted butter or margarine, depending on whether you want the balls to be dairy or parve ( vegetarian )

Classic chocolate balls with icing

Makes 20 balls.

Ingredients:

  • 300 gr. dry cookies of any sort, leftover cake or biscuits
  • ¾ cup sugar
  • 6 Tbsp. cocoa powder
  • 150 gr. butter or margarine, softened
  • 100 gr. chocolate, broken up into squares
  • 1 Tbsp. chocolate liqueur
  • ¼ cup walnuts, finely chopped
  • 1/3 cup dairy or parve milk at room temperature

Toppings:

  • Chocolate shavings, colored sprinkles or coconut flakes

If making for adults, you can add:

  • 1 shot glass of espresso
  • 1 Tbsp. whiskey or 1 Tbsp. brandy
  • 1/8 tsp. salt

Hazelnut and chocolate spread:

  • ½ cup dairy or parve whipped cream or mascarpone cheese
  • 1 cup cocoa powder

  • Directions:

Add the cookies or leftover cake to the bowl of a food processor and grind until very fine.

Pour the ground cookie crumbs into a large bowl, then add the sugar and cocoa powder. Mix well. Add the softened butter, then mix well.

Pour the milk into a small pot and heat over low heat. Add the chocolate and continue mixing until all the chocolate has completely melted.

Next, pour the chocolate into the cookie crumbs and mix well. Add the ground walnuts and mix again. If the mixture is too soft and the balls cannot retain their shape, put the mixture in the fridge for an hour, then take it out and form balls with a diameter of 3-4 centimeters, or whatever size you want.

Place the chocolate shavings, sprinkles or coconut on flat plates and then roll the chocolate balls in whichever topping you want. Then, place each ball in a paper cupcake holder. Store the balls in the fridge.

To prepare the adult version: Instead of using cocoa, use chocolate spread, whipped cream, espresso, whiskey or brandy and salt. Mix all the ingredients together. You can add some more whipped cream or chocolate spread if necessary.

Form balls, then roll them in the cocoa powder and then place them in paper cupcake holders.

Level of difficulty: Medium   Time: 1 hour    Status: Dairy or parve (vegetarian)

    Season's Greetings!

It's that time again to binge on movie trilogies or watch something new during the holiday season.  Create something new. We are onto the last two weeks of fall as trees stretch their barren arms and fingers to the sky.  A hush hovers over the land.

Coffee is plentiful. A Yeti knows how to start the morning
    right,
and maybe they indeed drink coffee!

Lights up and down the street, they wrap the home
in warmth and cheer. Take a walk to enjoy the solitude and splendor of the season.

Coca Cola Polar Bears with a smile.

Hot chocolate with a loved one to close the day
                     while it snows,
and snows outside. Let it snow
                              and snuggle  closer.

Or a gingerbread latte is above and beyond

A phenomenon whycats like trees and
    shiny breakables.  Perhaps
they think, "Ah they brought in nature for me!"

Take the time to take in the solitude,  read a
new book, or drink hot tea to close the day

Reminders of winter and angels all around from their tiny
    messengers

Remember times gone by they come around
again with sounds of the season reminding us
to be giddy like children. Embrace that to heart.
    And sing songs we remember.

Words & Brush Recipe Corner: Pear Tarte Tatin

     Pear Tarte Tatin

What do I do with a few extra pears that needed to either be used or thrown away?

    PEAR TARTE TATIN

Use a round iron pan with an 18- or 20-cm diameter.

    • 5 small pears
    • 1 lemon
    • ½ cup (or more) brown sugar
    • 50-70 gr. butter or margarine
    • ¼ tsp. cinnamon
    • 1 packet vanilla sugar
    • 1 package (400 gr.) puff pastry, either dairy or parve

    Egg wash:

    • 1 egg, beaten well

Peel the pears, then slice them in half and cut out the core with a melon baller.

Place the pear halves in a bowl and squeeze lemon juice on them. Use your fingers to coat all the pieces with the lemon juice.

Add the brown sugar, and butter or margarine, in the iron pan. Add the cinnamon and vanilla sugar and heat over medium heat. Stir while heating until everything has dissolved and the mixture is smooth.

Remove from the heat and arrange the pear halves inside the pan with the hollowed-out side facing down.

On a floured work surface, roll out the puff pastry with a rolling pin. Cut out a piece of pastry dough that will cover the entire surface of the pan. (You can keep the rest of the dough in the fridge.) Press the edge of the dough down into the pan.

Brush the dough with the beaten egg and bake in an oven that has been preheated to 200° for 15 minutes. Remove from the oven, place a serving plate upside down on top of the cake, then flip the cake over onto the serving plate. Let the caramel ooze over the sides of the cake.

Level of difficulty: Easy-medium  Time: 30-40 minutes   Status: Parve or dairy
