Apple tartlets with almond cream, honey and allspice

 APPLE TARTLETS with almond cream, honey and allspice. (credit: PASCALE PEREZ-RUBIN)


Makes 6 mini tartlets.

Ingredients:

Crust: 

  • 200 gr. puff pastry
  • 1 egg, beaten

  • Filling: 

  • 100 gr. (1 cup) ground almonds
  • 100 gr. cold butter or margarine, cut into cubes 
  • 100 gr. (1/2 cup) sugar
  • Pinch of salt
  • 1 large egg
  • ½ - 1 tsp. cinnamon
  • 1 Tbsp. instant pudding powder


  • Apples

  • 3 Gala apples, peeled, cored and cut into eighths
  • Juice of 1 lemon

  • Spiced honey:

  • 3-4 Tbsp. butter or margarine, melted
  • ¼ cup dark honey
  • ½ tsp. ground allspice 

  • Toppings:

  • ¼ cup honey
  • ½ cup pomegranate seeds


  • Directions:

    To prepare the crust: Flour your work surface and then roll out the puff pastry until it’s ½ cm thick. Line your greased tartlet pans or a muffin pan with the dough. Press it down into the pans. Brush the dough with the beaten egg, then place it in the freezer for 30-40 minutes. 

    To prepare the almond cream filling: Add the almonds, butter (or margarine), sugar and salt to a food processor, and blend until mixture is crumbly. Add the egg, cinnamon and vanilla pudding powder and blend until mixture is creamy. 

    Peel and core the apples, then slice thinly. Add the apple pieces to a bowl and add the lemon juice. Set aside. 

    To prepare the spiced honey: Mix the melted butter (or margarine) with the honey. 

    Place a spoonful of filling in the center of each frozen tartlet. Arrange the apple slices on top so that they completely cover the filling. Drizzle the honey mixture on top generously, then sprinkle on the allspice. 

    Bake in an oven that has been preheated to 180° for 20-30 minutes or until the dough turns golden brown and the apple pieces have softened. 

    Remove from the oven and let cool for 5 minutes. Drizzle more honey on top and serve with pomegranate seeds.

    Words & Brush Recipe Corner: Tomato Soup Recipe

     

    Tomato Soup Recipe



    Makes 24 Servings (Eat some today and tomorrow and freeze the rest)

    Ingrredients
  • 2 tablespoons Herbs de Provence Olive Oil or Plain Extra Virgin
  • 2 large Onions chopped
  • 4 to 5 Carrots chopped
  • 1 Celery chopped no leaves
  • 4 to 5 Whole Garlic Cloves
  • 1 28- oz. cans Tomatoes puree
  • 3 28- oz Peeled Tomatoes chopped
  • 6 ounces Tomato Paste
  • 1 cup Basil chopped
  • 1 tablespoon Fresh Rhyme chopped fine
  • 1 tablespoon Herbs de Provence, optional
  • 2 tablespoons of Acacia Honey or Sugar
  • Herbs de Provence Salt or whatever salt you normally use
  • Black Pepper to taste
  • 60 ounces Vegetable or Chicken Stock
  • Pesto
  • 1 loaf Country Bread
  • 2 tablespoons Unsalted Butter
  • 2 tablespoons Garlic, Herbs De Provence or Extra Virgin Olive Oil
  • 2 tablespoons Garlic minced
  • 2 tablespoons Parsley chopped
  • Instructions

    For the Croutons:


    Preheat Oven to 375 F


    Homemade croutons may seem like a bit of work, when it seems so easy to open a package from the store, but I promise you, once you've tasted them, you will never buy another box!  The great flavor and texture of homemade croutons will surprise you.  So give it a go!  You won't be sorry.


    Cut the bread into ¼” to ½” cubes.


    In a large sautΓ© pan, heat the butter and olive oil.  When melted, remove from heat and add garlic and parsley.  Mix thoroughly then add croutons.  When croutons are well‑coated, transfer to a baking sheet in a single layer and bake until golden brown.  Be sure to mix them around the pan every few minutes to get them golden and crisp on all sides.   Allow to cool BEFORE putting them in a bowl otherwise they will get soggy.

    October Open Thread




     




    A new week beacons.  Ready to get the day started, but first coffee is the only luxury to a parent of two small children.  At least the coffee grinder back up works. Just hammer the beans in a bag.




     



            As we go through walks and drives to see fruity pebbles of fall on trees, their branches growing ever barren, it is a nice change to the hot summer here in the South. Sometimes we get snow, other winters it is just cold with rain.   A great hush settles over the land as the forest animals take note and start their storage.   They know more than we take notice.    


                    Adventure is calling at the corn maze

    with bluegrass music, gem mining, and tasty eats

             Check out the local fair that comes by. Seeing everyone have fun, hearing children's laughter  to their sense of wonder brings on a nostalgia when we were kids.  County fair food from funnel cakes, hot dogs, slushies to frozen fried icecream to accompany the fun with our sweethearts and families. Try out one of the many games to win that stuffed unicorn or bear.  They look way too easy is deceiving.
